Minerals are inorganic elements which supply the body with essential micronutrients to function properly.
Basically your white rice, white pasta and white bread are typically heavily manufactured where a lot of the micronutrients (including vitamins and minerals) and fibre is lost. Often the glycemic index is higher in white varieties which gives you a bit of a "sugar spike".

If you compare the two side by side, you will see there are many less vitamins and minerals present in the white varieties. Also the fibre in the white variety is about a third of the wholegrain. Finally, the glycemic index (whilst low in both cases) is higher in the white variety.
So relatively speaking, yes, wholegrain varieties are higher in nutrients compared to 'empty' or low nutrient value white variety foods.
