The problem with too many egg yolks in your diet is due to the high fat and cholesterol levels contained within. The high fat levels result in a high calorie count which can pose a problem when trying to lose weight. Worth noting, egg yolks may not be directly responsible for increases in blood LDL cholesterol levels (ie. "bad cholesterol"). In fact, some of the latest research suggests that whole eggs may improve your blood lipid profile. Whole eggs also carry a number of health benefits, including eyesight protection, improved brain function, blood clot prevention, age-related cataract prevention and prevention against breast cancer (to name a few).
I personally think that it is of benefit to include egg yolks into your diet in moderation.
