This is a perfect dish to serve at lunch or light dinner, also great when you are watching your weight because it is low in fat but rich in protein and fibre.

INGREDIENTS

1,500 g
  cannellini beans, canned, drained
3.00 cup (489 g)
  tuna chunks in water, canned, drained
3.00 bag (450 g)
  baby spinach, torn
3.00 onion (267 g)
  red onion, sliced
12.00 tablespoon (192 g)
  balsamic vinegar
0.75 cup (162 g)
  olive oil
6.00 clove (18 g)
  garlic, minced
6 g
  fresh parsley, chopped
3 g
  sea salt
3 g
  black pepper, ground
 

METHOD

1. Drain the beans and rinse them under cold running water. Drain well.

2. In a large bowl, combine garlic, parsley, balsamic vinegar, olive oil, salt and pepper. Mix well.

3. Add the beans, red onion, tuna and spinach. Toss to coat. 

4. Serve and enjoy.
