Tomato and Herb Chicken Casserole

METHOD

  1. Grate onion and zucchini
  2. Chop chicken breast into cubes
  3. Spray a frying pan with a thin layer of olive oil and heat pan (low heat)
  4. Add onion and zucchini into pan and soften for 5 minutes
  5. Add chicken and cook 3/4 of the way
  6. Add diced tomatos, garlic and additional herbs (if needed)
  7. Simmer for 5-10 minutes
  8. Add tomato paste into pan and mix gently
  9. Continue to stir for 5 minutes so liquid evaporates whilst simmering
  10. Serve with hot vegetables
