METHOD
- Grate onion and zucchini
- Chop chicken breast into cubes
- Spray a frying pan with a thin layer of olive oil and heat pan (low heat)
- Add onion and zucchini into pan and soften for 5 minutes
- Add chicken and cook 3/4 of the way
- Add diced tomatos, garlic and additional herbs (if needed)
- Simmer for 5-10 minutes
- Add tomato paste into pan and mix gently
- Continue to stir for 5 minutes so liquid evaporates whilst simmering
- Serve with hot vegetables
