INGREDIENTS

  Mixed Vegetables (Peas, carrot and corn), boiled
0.50 cup (97 g)
  Fresh Broccoli, boiled
50 g
  Button Mushroom, sliced
0.50 cup (43 g)
  Red Capsicum, sliced
1.50 egg (45 g)
  Egg Whites
1.00 egg (44 g)
  Eggs
25 g
  Onion, sliced
25 g
  Skim Milk
1 g
  Olive Oil
1 g
  Sea Salt
1 g
  Black Pepper, ground
15 g
  Reduced-Fat Cheddar Cheese
 

METHOD

1. Preheat oven to 350 degrees F (175 C).

2. Place mixed veggies in a non-stick baking dish. Drizzle with olive oil and season with salt and pepper.

3. In a bowl, mix eggs with milk.

4. Pour egg mixture over and around the vegetables. Sprinkle cheese on top.

5. Place in the oven and bake until the top of the frittata is no longer runny (about 15-20 minutes).

6. Serve with fresh greens.
