SUMMARY

 

This recipe uses fresh strawberries, rhubarb and honey - simmered over low heat to create this simple compote for a healthy dessert! A good source of  fiber and Folate, it has no fats and high in antioxidants such as vitamin-C and those phytochemicals (Flavonoids), found effective in reducing blood cholesterol levels.

INGREDIENTS

10.00 berry (220 g)
  Fresh Strawberries
0.50 cup (60 g)
  Rhubarb Stalk
1.00 tablespoon (29 g)
  Honey
20 g
  Water
 

METHOD

1. Hull strawberries and cut into quarters.

2. Cut rhubarb in 1 inch slices.

3. Combine all ingredients in a saucepan, bring to a boil and gently simmer over medium-low heat until reduced and thickened and the fruit has softened, about 15 minutes.

4. Remove from heat.

5. Ladle in ramekins.

6. Serve warm or cold and enjoy!
