INGREDIENTS

250 g
  Chicken Fillet, lean
30 g
  Red Capsicum
30 g
  Green Capsicum
30 g
  Spring Onion
2.00 teaspoon (6 g)
  Ginger
3.00 tablespoon (33 g)
  Roasted Peanuts
3.00 clove (9 g)
  Garlic
1.00 tablespoon (24 g)
  Oyster Sauce
0.50 teaspoon (3 g)
  Sea Salt
0.50 teaspoon (1 g)
  Black Pepper, ground
5 g
  Brown Sugar
5 g
  Chili Sauce
10 g
  Canola OIl
 

METHOD

1. Slice chicken, capsicum, and ginger into strips.

2. Chop spring onion and mince garlic.

3. In a wok or skillet heat oil to high heat. Add in ginger, garlic and chicken.

4. Stir until the chicken is no longer pink (about 10 minutes). Add in the vegetables and stir fry for  5 minutes until cooked.

5. Add in peanuts (chopped), oyster sauce, sugar and chili sauce. Season with salt and pepper.

6. Mix well. Cook for 5 minutes. Remove from heat.

7. Serve in a platter. May garnish with some fresh parsley.
