SUMMARY
A quick and easy one dish meal, tasty and very healthy. It provides our body with enough energy from potatoes, high-quality protein from eggs and cheese, vitamins and minerals from spinach. It's low in fat, GI and calories, with only 147 kcalories per serve!

METHOD
1. Pre-heat grill on high.
2. Heat oil in a 20cm-diameter non-stick frying pan over medium-high heat.
2. Add the potato and cook, stirring occasionally, for 5 minutes or until golden.
3. Reduce heat to medium. Add the onions and baby spinach leaves and cook, stirring occasionally, for 3 minutes or until spinach wilts.
4. Whisk together the eggs, egg whites, cream cheese and garlic in a medium bowl. Season with salt and pepper.
5. Pour the egg mixture into the pan. Cook over medium-high heat for 5 minutes or until frittata is set around the edge but still runny in the centre.
6. Transfer to preheated grill and cook for 5 minutes or until golden brown and just set.
7. Cut into wedges to serve.
