INGREDIENTS

250 g
  Mussels, fresh
0.50 onion (45 g)
  Onion, chopped
1.50 clove (5 g)
  Garlic, minced
0.50 stalk (20 g)
  Celery Stalk, sliced
0.50 chili (5 g)
  Hot Chili, chopped
0.50 teaspoon (1 g)
  Paprika
25.00 mL (25 g)
  Dry White Wine
1 g
  Sea Salt
1 g
  Black Pepper, ground
5 g
  Fresh Parsley Leaves, chopped
0.50 teaspoon (2 g)
  Olive Oil
 

METHOD

1. Heat oil in a large skillet over medium-high heat, Stir-fry onion, garlic, celery, and ginger for 2-3 minutes.

2. Add chili and  paprika; Cook for about 1-2 minutes.

3. Add the mussels and the wine, then cover and cook for 3-5 minutes over high heat,

4. Shaking the pan occasionally. Season with salt and pepper to taste.

5. Discard any clams whose shells remain closed.

6. Serve, garnished with chopped parsley leaves and accompanied by fresh, whole wheat bread.
