INGREDIENTS

3.00 cup (459 g)
  cherries, pitted
3.00 Juice of 1 lemon (141 g)
  lemon juice
75 g
  Splenda intense sweetener
1.50 cup (375 g)
  water
3.00 cup (780 g)
  low-fat ricotta cheese
3.00 tub (624 g)
  low-fat vanilla yoghurt
0.75 cup (110 g)
  almonds, slivered
3.00 teaspoon (6 g)
  cinnamon, ground
 

METHOD

1. In a small bowl, mix ricotta and yogurt. Chill until ready to serve.

2. Combine cherries, lime juice, water and Splenda in a small saucepan; bring to a boil. Reduce heat and simmer for 5-7 minutes. Allow to cool. 

3. Spoon ricotta mixture into dessert cups. Top with cherry sauce and sprinkle with almonds and cinnamon.

4. Serve and enjoy.
