These are just tiny mouthful morsels, decorated each with lemon wedges, fresh raspberries and mint. Great for a morning tea party and a delicious dessert recipe that is very easy to make and low in calories.

INGREDIENTS

  Wholemeal Canape Pastry, prepared cases
6 g
  Lemon Juice
1 g
  Lemon Rind
10 g
  Splenda (Intense Sweetener)
0.20 egg (9 g)
  Egg
0.20 egg (2 g)
  Egg Yolk
10 g
  Skim Milk
20 g
  Lemon, cut into wedges
4.00 berries (8 g)
  Fresh Raspberries
3 g
  Fresh Mint Leaves
 

METHOD

1. Combine the lemon rind and juice, splenda, milk and eggs in a medium saucepan over low heat.

2. Cook, stirring, for 5 minutes or until curd thickens.

3. Remove from heat and strain through a fine sieve into a bowl.

4. Cover with plastic wrap and place in the fridge for 1 hour to chill.

5. Spoon the lemon curd evenly among the pastry cases.

6. Top with a lemon wedges, fresh raspberries and mint leaves.

7. Serve on a serving platter and enjoy!
