METHOD

1. Place all ingredients in a large bowl. Mix until smooth.

2. Heat oil in a non-stick pan over medium-low, cook in batches until bubbles form on the surface, then turn over and cook until golden.

3. Serve with sugar-free syrup and fresh blueberries.
