INGREDIENTS

  shallots, chopped

  garlic, minced

  ginger root, cut into thin strips

  fresh prawns, large

METHOD

1. Start by cleaning and trimming the prawns. Rinse under running water. Drain. Cut off the tentacles and feet.

2. Heat the in a pot. Saute the shallots, garlic and ginger, stirring often, until softened and fragrant.

3. Pour in water. Bring to the boil, add the prawns and spinach. Cook for 5 minutes. Season with salt and pepper to taste.  

4. Ladle in serving bowls and serve.
