INGREDIENTS

  skim milk
3.00 1 Rounded Scoop (96 g)
     Optimum Nutrition NATURAL 100% WHEY Gold Standard, Vanilla flavour   
3.00 onion (267 g)
  onion, chopped
4.50 cup (333 g)
  fresh mushrooms, sliced
150 g
  reduced-fat cheddar cheese, grated
15 g
  fresh parsley, chopped
6.00 tablespoon (81 g)
  olive oil, divided
 

METHOD

1. Beat the eggs and milk together in a bowl.

2. Add the protein powder, mixing until dissolved.

3. Heat 1 tablespoon oil in a large non-stick pan or skillet. Stir-fry onion and mushrooms. Transfer into a plate.

4. Heat remaining oil in the pan, cook the scrambled eggs until about to set at the bottom.

5. Top half portion with mushroom mixture and sprinkle with cheese. Season with salt and pepper to taste. 

6. Flip over the other half to cover the filling. Cook until cheese is melted..

7. Transfer into a serving platter. Sprinkle with chopped parsley.

8. Serve immediately, enjoy!
