Potato and Apple Medley is a wonderful variation on the American summertime standby.  It is a healthy, low calorie and low fat recipe that blends the earthy taste of potato and the juiciness, sweetness and crispness of apples.  Potatoes rich in vitamin C, vitamin B6, copper, potassium, manganese, and dietary fiber while apples are also good sources of fiber and vitamin C.

INGREDIENTS

  Potato, cubed
0.75 cup (188 g)
  Water
50 g
  Apple, red, diced
1.50 teaspoon (8 g)
  Lemon Juice
5 g
  Olive oil
0.25 cup (31 g)
  Onion, white, chopped
 

METHOD

  1. Combine potato and water in a medium saucepan.  Bring to a boil; cover, reduce heat, and simmer until potato is almost tender (about 10 minutes).  Drain well.
  2. Combine apple and lemon juice, toss gently and set aside.
  3. In a large nonstick skillet , add oil.  Place over medium high-heat until hot. Add potato and onion, saute until potato is lightly browned and onion is tender. Add reserved apple, cover and cook for 1 minute.
  4. Uncover and cook an additional 2 minutes.
