Pineapples contain an important enzyme called bromelain. This enzyme has been found to be an effective anti-inflammatory compound that helps reduce swelling. It is also known to treat sore throat, arthritis, gout, and acute sinusitis. This dessert recipe balances the tart and sweet taste of pineapple. This low-fat  dessert recipe is also great for snack!

INGREDIENTS

  Pineapple Chunks, canned
0.12 cup (17 g)
  Wheat Flour, self-raising
0.08 serve (0 g)
  Baking Powder
0 g
  Baking Soda
0.08 egg (4 g)
  Egg, whole
0.48 teaspoon (0 g)
  Splenda (Intense Sweetener)
0.08 tablespoon (1 g)
  Olive Oil
 

METHOD

1. Preheat oven to 350 F (175 C). Grease an 8-inch square baking pan.

2. Measure out 1/2 of the pineapple chunks (100g). Puree until smooth in a food processor or blender.

3. Using an electric mixer, beat together pureed pineapple, egg, and oil for 1 minute.

4. Add the flour, sugar substitute (sweetener), baking soda and powder and beat again for another 2 minutes. Stir in the remaining 1/2 of the pineapple chunks (100g).

5. Spoon the batter into the prepared pan. Smooth the top and bake for 25 minutes until a knife inserted in the middle comes out clean.

6. Cool and  sprinkle with powdered confectioner's sugar (optional) . 

7. Cut into 25 squares.

8. Serve.
