Agua Frescas are light and refreshing drink made famous all over Mexico. It is a perfect thirst quencher on a hot summer day, you can use any fruit you like to flavor it. The traditional varieties are watermelon, cantaloupe, strawberry and cucumber. Go ahead and make your own, this recipe calls for pineapple and lime it's very easy to make and healthy too, only less than 50 kcalories per serve!
1. In a blender, combine pineapple, lime juice, 1 cup water and Splenda. Puree until smooth.
2. Transfer in a pitcher and add remaining water and some lime wedges.
3. Chill until just before serving.
4. Pour into ice-filled glasses and garnish with lime wedges and mint leaves.
