An unbelieveably sweet and healthy treat that yields only 200 calories per serving.  Peaches have good to excellent antioxidant activity and is a good source of dietary fiber making it beneficial for those losing / maintaining weight.

INGREDIENTS

15 g
  Butter, reduced fat
2.00 medium (290 g)
  Peach, halved
1.00 egg (26 g)
  Egg white, room temperature
1 g
  Cream of Tartar
23 g
  Splenda, powdered
20 g
  Coconut, dessicated
 

METHOD

  1. Preheat the oven to 3750F(1900C).  Grease an 8"x8"x2" baking dish with 1 tablespoon of the butter.  Place the peaches in the dish, pitted side up, and dot the centers with the remaining tablespoons of butter.  Cover with aluminum foil and bake for 15 minutes.
  2. Meanwhile, in a small bowl, use an electric mixer at medium speed to beat the egg whites and cream of tartar to soft peaks.  Gradually add splenda, beating until stiff.  Fold in the dessicated coconut.
  3. Remove the baking dish from the oven, uncover, and place a heaping tablespoon of meringue on each peach half.  Return to the oven and bake, uncovered for 6 to 8 minutes, or until the meringue is slightly browned.  Serve at once.
