SUMMARY

INGREDIENTS

Semi-dried Tomatoes, cut into strips
1.00 tomato (167 g)
Tomato, diced
0.50 serve (20 g)
Green Olives, sliced
0.50 serve (20 g)
Black Olives, sliced
1.00 tablespoon (15 g)
Capers, drained
2.00 clove (6 g)
Garlic, chopped
0.50 chili (5 g)
Hot Chili, chopped
0.25 teaspoon (0 g)
Mixed Herbs, dried
0.50 tablespoon (7 g)
Olive Oil
1 g
PEPPER, GROUND, BLACK OR WHITE
1 g
SALT, IODISED
0.25 cup (7 g)
Fresh Basil
1.00 cup (148 g)
Wholegrain Pasta, boiled
1.50 Tbsp (23 g)
Grated Parmesan Cheese, less-fat
METHOD
1. Heat oil in a skillet. Saute garlic over medium heat, add the olives, semi-dried tomatoes, chili, mixed herbs, capers and diced tomatoes and simmer for 20 minutes. Season with salt and pepper.
2. Add pasta and basil, cook for 5 minutes and toss. Remove from heat.
3. Place in serving platter, sprinkled with parmesan cheese and garnish with fresh basil leaves or parsley.
4. Serve and enjoy!
