A classic French side dish; Freshly squeezed orange juice gives a sweet-sour taste to baby carrots. METHOD
1. In a large skillet, heat butter to medium, then add honey, water and salt. Simmer over mediuum-high for 2-3 minutes.
2. Add baby carrots and orange juice and cook 5 to 7 minutes, stirring often until the liquid is a syrupy glaze and the carrots are crisp and tender.
3. Sprinkle with fresh parsley.
4. Serve with grilled fish, pork or poultry.
