1. Drain and dice tofu.
2. In a skillet over medium-high heat, saute the onion, garlic and tomato in olive oil until soft. - about five minutes stirring occasionally.
3. In a medium bowl, mix together tofu and mushroom. Season with salt and pepper. The tofu should crumble as you mix.
4. Pour the tofu mixture into the skillet with the onion and tomato. Continue cooking for 5 to 10 minutes, stirring often until the tofu is browned to your liking.
5. Serve warm with toast or tortillas.
