A light and refreshing dessert that captures the essence of summer. 

INGREDIENTS

1.50 cup (375 g)
  water
150 g
  Splenda no calorie sweetener
1,500 g
  melon, peeled and cubed
3.00 tub (624 g)
  low-fat vanilla yoghurt
90.00 mL (99 g)
  lime juice
 

METHOD

1. Combine water and Splenda in a measuring cup. Set aside. 

2. Puree melon in a food processor or blender, in 2 batches, pulsing until smooth. Transfer to a large bowl. Whisk in the syrup, yoghurt and lime juice until combined.

3. Pour the mixture through a fine-mesh sieve into another large bowl, whisking to release all juice. Discard pulp.

4. Transfer the extracted juices into an ice cream maker and freeze according to manufacturer’s directions.
