A Vegan friendly dessert recipe that is very Asian; Mangoes are naturally very sweet and lime juice stops it from being too sweet, while orange juice and cardamom adds flavour to it. For vegans, silken tofu is a great alternative for dairy products like milk, yoghurt or cream. It is also rich in calcium, protein, vitamins, minerals and antioxidants, which helps protect the body from harmful free radicals.

INGREDIENTS

1.00 cup (207 g)
  Mango, cubed
0.75 cup (146 g)
  Silken Tofu, cubed
0.25 cup (65 g)
  Soy Milk
25.00 mL (28 g)
  Fresh Orange Juice
0.50 lime (11 g)
  Lime Juice
0.50 Tsp (1 g)
  Cardamom, ground
 

METHOD

1. Place all ingredients in a blender; Blend 2-3 minutes until smooth.

2. Divide the mango mousse between 4 parfait glasses and chill about 3 hours.

3. Garnish with mango slices and mint leaves.

4. Serve and enjoy!
