SUMMARY

 

A simple vegetarian pasta main dish made of macaroni, cheese and salsa as well as tofu. It is an excellent source of dietary fiber, protein and isoflavones for bone health and cancer prevention.

INGREDIENTS

1.00 cup (148 g)
  Wholemeal Pasta (Macaroni), boiled
0.75 cup (146 g)
  Tofu, cubed
0.75 cup (206 g)
  Tomato Salsa
10 g
  Black Bean Sauce
5 g
  Soybean Oil
 

METHOD

1. In skillet over medium-high heat, heat oil. Add tofu cubes and brown, stirring occasionally, to brown on all sides, about 5 minutes.

2. Reduce heat to low, add boiled macaroni, black bean sauce, and salsa.

3. Toss and heat over medium-low until all ingredients are heated through, about 10 minutes.

4. Serve in platter and garnish with fresh parsley leaves.
