Try this luscious lemon bars with a hint of ginger, they are absolutely divine! Do this ahead it makes a great dessert or grab and go snack.

INGREDIENTS

140 g
  wholemeal flour, divided
75 g
  Splenda sugar blend, divided
10 g
  lemon zest, grated
1 g
  iodized salt
1.00 serve (1 g)
  baking powder
75 g
  reduced-fat butter
3.00 egg (132 g)
  eggs
2.00 Juice of 1 lemon (94 g)
  lemon juice
 

METHOD

1. Preheat oven to 350 F (175 C). Lightly grease an 8-inch square baking pan with cooking spray.

2. Combine 120 g flour, salt, lemon zest, 40 g Splenda, and ginger in a medium bowl. Cut in the butter until it forms a coarse paste. Knead dough until it comes together; transfer into the prepared pan, spread with floured hands and press evenly at the bottom. Bake for 20 minutes or until golden brown. Let cool on a rack while you make the filling.

3. Combine baking soda, remaining sugar and flour in a small bowl. Beat eggs on high in a medium bowl using a hand mixer until tripled in volume and fluffy, about 5 minutes. Reduce speed to low and add flour mixture and lemon juice. Pour on top of warm crust. Bake for 20 minutes or until the filling is set in the center. Cool completely.

4. Sprinkle with confectioner's sugar (optional) and cut into 2-inch squares.

5. Serve or store in airtight container.
