An Italian inspired healthy vegetable salad. It is made of fresh broccoli, tomato, onion, parmesan cheese and vinaigrette dressing. A delectably tangy salad, you can just add grilled fish or chicken fillet to make it a complete meal. This recipe is fiber, antioxidant and calcium rich, low-fat and it only has 138 kcalories per serve!

INGREDIENTS

  Fresh Broccoli (Head), cubed
0.67 tomato (111 g)
  Tomato, sliced
33 g
  Onion, chopped
0.33 cup (80 g)
  Red Wine Vinegar
10 g
  Olive Oil
0.67 teaspoon (1 g)
  Mixed Herbs, dried
2.00 clove (6 g)
  Garlic, chopped
0.67 Tbsp (10 g)
  Less-Fat Parmesan Cheese
1 g
  Black Pepper, ground
1 g
  Sea Salt
 

METHOD

1. Prepare vinaigrette dressing: In a mixing bowl, mix vinegar, garlic and dried herbs. Drizzle with olive oil and season with salt and pepper. Mix thoroughly until well blended. Set aside.

2. In a medium saucepan, boil water over medium-high heat. Drop broccoli and cook for 2 minutes. Remove from heat and drain.

3. Transfer broccoli in the mixing bowl with vinaigrette dressing. Add parmesan cheese, sliced onion and tomato.

4. Toss until well coated with dressing.

5. Serve and enjoy!
