INGREDIENTS

0.20 cup (28 g)
  Flour, all purpose, white

  Splenda, powdered
0.10 teaspoon (1 g)
  Salt, iodized

  Baking soda
0.15 cup (14 g)
  Oat, rolled
9 g
  Cereal, bran
0.05 cup (9 g)
  Prunes, dried
0.20 egg (7 g)
  Egg, lightly beaten
0.13 cup (34 g)
  Buttermilk
16 g
  Molasses
 

METHOD

  1. Preheat the oven to 3500F(1760C).  In a mixing bowl, combine the flour, splenda, salt, and baking soda.  Stir in the oats, bran cereal and raisins.
  2. Combine the eggs, buttermilk, and molasses.  Add them to the dry ingredients and stir just until dry ingredients are moistened.
  3. Spoon the batter into greased 2-inch muffin cups, filling each cup two thirds full.  Bake for 15 to 20 minutes, or until a toothpick inserted into a muffin comes out clean.
