This mushroom soup is so yummy, no need to add cream in it! It's a great dish for a cold day and healthy too.

INGREDIENTS

6.00 tablespoon (81 g)
  olive oil
3.00 onion (267 g)
  onion, chopped
6.00 clove (18 g)
  garlic, minced
1,500 g
  button mushrooms, sliced
6.00 tablespoon (13 g)
  mixed fresh herbs, chopped
3.00 teaspoon (7 g)
  paprika
300 g
  dry white wine
12.00 cup (3,060 g)
  chicken stock
3 g
  sea salt
3 g
  black pepper, to taste
 

METHOD

1. Heat oil in a large saucepan or stock pot over medium heat. Stir-fry onions and garlic until onions are softened, about 3-4 minutes.

2. Add mushrooms, herbs and paprika; stir well. Cook for 10 minutes.

3. Add wine and stir; cook until liquid is almost evaporated.

4. Add broth and bring soup to a boil; reduce heat to low and cook, covered for 20 minutes.

5. Puree soup in a blender or food processor in batches if needed until smooth.

6. Ladle soup into bowls. Garnish with parsley, if desired.

7. Serve and enjoy.
