INGREDIENTS

  chicken stock
180 g
  dry sherry
3.00 tablespoon (63 g)
  reduced-sodium soy sauce
6.00 cup (750 g)
  onion, sliced
6 g
  fresh thyme leaves
3 g
  fresh ground black pepper
12.00 slice (132 g)
  bread toast, sliced
180 g
  cheddar cheese, reduced-fat
6.00 tablespoon (81 g)
  olive oil
 

METHOD

1. Heat oil in a large saucepan over medium-high. Add onions; reduce heat to medium and cook for 10 minutes, or until tender and golden. Stir often. 

2. Add sherry, soy sauce and herbs; cook for 5 minutes. Stir in stock and bring to a boil; cook for another 10 minutes. Season with pepper.

3. Ladle in individual bowls. Top with toast and sprinkle with cheese.

4. Serve and enjoy.
