This hearty soup makes a great comfort food especially on a cold day!

INGREDIENTS

800 g
  asparagus spears, trimmed
500 g
  new potatoes, cubed
200 g
  brown rice, uncoooked
1.00 cup (125 g)
  onion, chopped
6.00 clove (18 g)
  garlic, minced
60 g
  leeks, chopped
10 g
  parsley, chopped
12.00 cup (3,060 g)
  chicken stock
2 g
  sea salt
2 g
  black pepper
 

METHOD

1. In a large pot, bring stock to a boil.

2. Add rice, potatoes, and carrots. Cover and simmer about 15 minutes.

3. Meanwhile, heat oil over medium-high in a pan or skillet; stir-fry onion, garlic, leeks and parsley until soft and fragrant. Add into the pot with boiled rice and vegetables.

4. Add asparagus and potatoes, simmer for 25-30 minutes over low heat stirring occasionally. Season with salt and pepper to taste. Remove from heat.

5. Ladle in individual bowls. Garnish with parsley if desired.

6. Serve and enjoy.
