Greek inspired calamari stew recipe. Fresh calamari are cooked with mixed spice and red wine sauce. This is a wonderful low-fat, low-calorie dish you will surely enjoy!

INGREDIENTS

250 g
  Fresh Calamari, cut into chunks
15 g
  Onion, chopped
0.50 teaspoon (1 g)
  Mixed Spice, ground
1.00 tablespoon (20 g)
  Vinegar
100.00 mL (100 g)
  Red Wine
1 g
  Sea Salt
1 g
  Black Pepper, ground
3 g
  Olive Oil
1.00 tablespoon (2 g)
  Fresh Coriander Leaves, chopped
 

METHOD

1. Place the calamari and onions into a large saucepan with mixed spice. Simmer over low heat for about 15 minutes until the juices have mostly evaporated.

2. Stir in the wine, olive oil, vinegar and pepper. Cover and cook over low heat for about 45 minutes, stirring occasionally. If necessary, remove the lid shortly before the end of cooking to allow the sauce to thicken.

3. Ladle into bowls and sprinkle with fresh coriander leaves (chopped).

4. Serve over rice or with toasted wholegrain bread.
