This vitamin is very essential for the production of collagen (a protein), which is the basis of a number of body structures, like the skin, connective tissue, tendons, and cartilage. In addition, the vitamin is important for strengthening the body's immune system.

INGREDIENTS

0.33 teaspoon (1 g)
  garlic, crushed
0.33 tablespoon (5 g)
  olive oil
0.67 tablespoon (11 g)
  vinegar, balsamic
0.17 onion (15 g)
  onion, chopped
0.17 cup (24 g)
  capsicum, baked, sliced thinly
77 g
  brussels sprout
1.33 cup (99 g)
  gnocchi
 

METHOD

1.  Cut each Brussels sprout in half and thinly slice each half crosswise.

2.  Heat large nonstick skillet or wok, coated with cooking spray, over medium-high heat.

3.  Add onions and garlic and saute 2 minutes; add Brussels sprouts and stir-fry 4 minutes. Reduce heat to medium and add red peppers.

4.  Cook 1 to 2 minutes or until Brussels sprouts are crisp-tender.

5.  Remove from pan and keep warm. Heat olive oil in skillet; add gnocchi and cook until golden brown, stirring occasionally, about 3 minutes.

6.  Add Brussels sprout mixture and toss to combine.

7.  Serve sprinkled with balsamic vinegar.
