INGREDIENTS

1.00 fillet (200 g)
  Chicken Breast Fillet, lean, cut into strips
1.00 teaspoon (3 g)
  Ginger, grated
0.25 cup (66 g)
  Orange Juice, fresh
25 g
  Button Mushroom, sliced
10 g
  Cashew Nuts
1.00 clove (3 g)
  Garlic, minced
0.50 onion (45 g)
  White Onion, Sliced
0.25 cup (21 g)
  Red Capsicum
0.25 cup (21 g)
  Green Capsicum
25 g
  White Wine
1 g
  Sea Salt
1 g
  Black Pepper, ground
0.50 teaspoon (2 g)
  Olive Oil
 

METHOD

1. Rub the chicken breasts with ginger.

2. Heat the oil in a large skillet over medium-high heat and add the chicken. Stir-fry for about 5 minutes.

3. Add the mushrooms, garlic, onion, red and green capsicum and cashew nuts. Stir-fry for 2-3 minutes then add white wine and orange juice. Simmer for 10-15 minutes. Season with salt and pepper.

4. Serve immediately in a platter or top over rice.
