A quick, easy and healthy fruit salad recipe with minty lemon cream topping. You can use just about any kind of fruit that are season in making this wonderful sweet treat!

INGREDIENTS

0.13 cup (30 g)
  Fat-Free Cream Cheese
0.50 tub (104 g)
  Non-Fat Yogurt, Vanilla flavored
38 g
  Fat-Free Sour Cream
1.00 teaspoon (2 g)
  Splenda Sugar Blend
0.25 tablespoon (1 g)
  Fresh Mint Leaves, finely chopped
0.25 Juice of 1 lemon (12 g)
  Lemon Juice
0.25 apple (35 g)
  Apple, cored and diced
0.25 orange (33 g)
  Orange, peeled and cut into segments
0.25 peach (36 g)
  Peach, diced
0.25 cup (38 g)
  Cherries
25 g
  Grapes, seedless
25 g
  Flesh of Young Coconut, grated
 

METHOD

1. Whisk yogurt, cream cheese,  sour cream, sugar (Splenda), lemon juice and mint until the sugar dissolves.

2. Chill, covered, for 1 hour.

3. Toss fruits and grated young coconut in a large mixing bowl.

4. Divide fruits between 6 dessert cups and top with the lemon-mint cream.

5. Serve immediately to enjoy.
