Basic salmon loaf is made of poached salmon, breadcrumbs, skim milk, onion, celery and parsley. This version is low in fat and cholesterol but loaded with healthful omega-3 fatty acids, protein, vitamin B's and calcium. A baked salmon dish that is very filling and delicious. It's a great recipe to serve for dinner, enjoy it hot or cold!

INGREDIENTS

0.60 fillet (85 g)
  Salmon Fillet, poached
0.30 cup (38 g)
  Breadcrumbs
30 g
  Skim Milk
0.20 egg (9 g)
  Egg
0.20 Juice of 1 lemon (9 g)
  Lemon Juice
2 g
  Parsley, chopped
0.20 onion (18 g)
  Onion, chopped
0.40 stalk (16 g)
  Celery, chopped
0 g
  Sea Salt
0 g
  Black Pepper, ground
 

METHOD

1. Preheat oven to 375 F (190 C).

2. Lightly grease a baking dish.

3. Soften breadcrumbs in milk. Set aside.

4. Place salmon in a large bowl and add softened bread crumbs, eggs, onion, parsley, celery, lemon juice, salt and pepper. Mix until combined well.

5. Transfer salmon mixture into baking dish, patting down firmly.

6. Fill a larger pan with hot water and put the salmon baking dish into it.

7. Bake for 50-60 minutes or until loaf is firm.

8. Cool slightly before slicing.

9. Serve.
