INGREDIENTS

2.00 potato (120 g)
  New Potatoes
0.33 cup (87 g)
  Skim Milk
1.33 clove (4 g)
  Garlic, chopped
0.33 cup (80 g)
  Fat-free Cream Cheese
1.33 tablespoon (5 g)
  Chives, chopped
 

METHOD

1. Peel and dice potatoes, making sure all are relatively the same size.

2. Place in a large saucepan, add the salt, and cover with water.

3. Bring to a boil over medium-high heat for 5 minutes, and then reduce heat to maintain a rolling boil.

4. Cook until potatoes fall apart when poked with a fork (about 20-25 minutes).

5. Heat the milk and the garlic in a medium saucepan over medium heat until simmering. Remove from heat and set aside.

6. Remove the potatoes from the heat and drain off the water.

7. Mash and add the garlic-milk mixture and cream cheese; stir to combine.

8. Let stand for 5 minutes so that mixture thickens.

9. Garnish with chopped chives. Serve.
