A great alternative to mashed potatoes! This interesting recipe is calcium and fibre-rich, low-carb, low-fat and low in calorie too, just 87 kcalories per serve!

INGREDIENTS

1.50 cup (159 g)
  Cauliflower Florets
2.00 clove (6 g)
  Garlic, minced
0.50 cup (120 g)
  Fat-Free Cream Cheese
1 g
  Sea Salt
1 g
  Black Pepper, ground
1.00 tablespoon (4 g)
  Chives, chopped
 

METHOD

1. Boil cauliflower in water until cauliflower is tender about 20 minutes. Drain water using a strainer.

2. Add garlic, cream cheese, salt and pepper to the softened cauliflower and mash it thoroughly until smooth and creamy or you can just place all the ingredients in a food processor.

3. Serve immediately and garnish with fresh chives, fried onions and fresh coriander (optional).
