SUMMARY
A light dish that will surely fill you up! You can make them individually or just get it all ready and have everyone create their own.
INGREDIENTS

ripe avocados, peeled, stoned and thinly sliced
600 g
homemade salsa
3.00 tablespoon (41 g)
olive oil
1.50 cup (128 g)
red capsicum, cut into thin strips
1.50 cup (174 g)
carrots, cut into thin strips
6.00 cup (1,266 g)
low-sodium black beans, rinsed
3.00 tablespoon (7 g)
coriander, fresh
12.00 tortilla (228 g)
whole wheat tortilla
6.00 cup (216 g)
romaine lettuce, shredded
210 g
lime, cut into wedges
METHOD
1. Heat oil in a non-stick pan or skillet over medium high, stir-fry capsicum and carrots for 3 minutes.
2. Add black beans, salsa, cumin and coriander; cook for another 3-5 minutes or until heated through.
3. Divide mixture into 4 tortillas and top with sliced avocados. Roll up tightly, starting at the bottom.
4. Place in a serving dish with seam side down.
5. Serve with lemon wedges.
