INGREDIENTS

red capsicum, roasted, peeled
750 g
evaporated skim milk
3.00 cup (765 g)
chicken stock

garlic powder
0.75 teaspoon (1 g)
black pepper, ground
6.00 tablespoon (13 g)
fresh basil, chopped
METHOD
1. Combine tomatoes, red peppers, and basil in a blender or food processor. Puree until smooth.
2. Put tomato mixture in a medium sauce pan and bring to a boil over medium heat.
3. Add evaporated milk, garlic powder, and pepper. Reduce heat and gently simmer for 10 minutes.
4. Ladle in serving bowls and garnish with fresh basil.
5. Serve.
