- Melt the butter in a skillet over moderately high heat. Add the chicken breasts and brown about 3 minutes on each side. Do not overcook. Remove the breasts to a warm platter.
- Add the flour, salt, tarragon and mustard. Gradually stir in the broth. Cook stirring and scraping up any brown bits stuck to the skillet. Continue to cook until the liquid has boiled down by half. Add the evaporated milk and cook until mixture thickens slightly. Return the breasts and any accumulated juices to the skillet to reheat. Spoon the sauce over the breasts.
