Chicken Breast with Tarragon is a delicious and healthy dish that's quick and easy to cook.  Chicken breasts are perfected with a tarragon sauce to finish a sweet-licorice flavor.  Chicken breasts lean are very rich in protein and niacin. It is also a good source of selenium, vitamin B6 and phosphorus.  Meanwhiile, tarragons are rich in phytonutrients as well antioxidants that help promote health and prevent diseases.

  Chicken breasts, lean

  Flour, plain, white
0.25 teaspoon (2 g)
  Salt, iodised
0.25 teaspoon (1 g)
  Tarragon, dried, crumbled
3 g
  Mustard, spicy brown
0.25 cup (64 g)
  Chicken Broth
0.25 cup (68 g)
  Evaporated milk


  1. Melt the butter in a skillet over moderately high heat.  Add the chicken breasts and brown about 3 minutes on each side.  Do not overcook.  Remove the breasts to a warm platter.
  2. Add the flour, salt, tarragon and mustard.  Gradually stir in the broth.  Cook stirring and scraping up any brown bits stuck to the skillet.  Continue to cook until the liquid has boiled down by half.  Add the evaporated milk and cook until mixture thickens slightly.  Return the breasts and any accumulated juices to the skillet to reheat.  Spoon the sauce over the breasts.
