METHOD

1. Place rhubarb, cherries, sugar, water and lemon zest in a medium saucepan. Stir and bring into a simmer; cook for 25 minutes, or until thickened.

2. Spoon cherry-rhubarb mixture into each of the 4 dessert glasses.

3. Top with whipped topping.
