An absolutely delicious potato recipe with skim milk, fat-free cream cheese, spices and herbs. This great tasting side provides our body with good amounts of high-quality protein, calcium and fuel for energy. It is also low in fat, GI and only has 134 kcalories per serve!

INGREDIENTS

200 g
  New Potatoes, sliced thinly
6 g
  Reduced-Fat Butter
3 g
  Wholemeal Flour
0.40 cup (104 g)
  Skim Milk
0.20 cup (48 g)
  Fat-Free Cream Cheese
0.20 teaspoon (0 g)
  Black Pepper, ground
0.10 cup, shredded (11 g)
  Fat-Free Mozzarella Cheese, shredded
2 g
  Fresh Parsley Leaves, chopped
0.20 teaspoon (0 g)
  Paprika
 

METHOD

1. In a medium saucepan, melt butter and add in flour.

2. Let sit for a minute then stir in milk  with wire whisk, season with pepper.

3. Cook and bring to boil over medium heat about 5-7 minutes. Reduce to low and add in cream cheese. Set aside.

4. In a baking dish, place half of the potatoes then pour half of the cheese sauce on top.

5. Repeat procedure for the next layer of potatoes and cheese sauce.

6, Sprinkle with mozzarella cheese, paprika and chopped parsley on top.

7. Bake in pre-heated oven to 350 F (175 C) for about 1 hour.

8. Serve and enjoy.
