This breakfast treat is very high in protein, fiber and antioxidants and can be served with a variety of fun toppings and mix-ins.

INGREDIENTS

12.00 serve (2,340 g)
  quinoa, cooked with water
6.00 cup (1,560 g)
  skim milk
3 g
  sea salt
3.00 tablespoon (86 g)
  honey
24.00 date (120 g)
  dates, pitted and chopped
90 g
  almonds, slivered
3.00 teaspoon (6 g)
  cinnamon, ground
 

METHOD

1. Toast the almonds in a skillet over medium heat until just golden, 3 to 5 minutes; set aside.

2. Heat the cinnamon and quinoa together in a saucepan over medium heat until warmed through.

3. Add the milk and sea salt to the saucepan and stir; bring the mixture to a boil, reduce heat to low, place a cover on the saucepan, and allow to cook at a simmer for 12 to 15 minutes. Remove from heat.

4. Stir in the honey and dates. Divide into 4 bowls. Sprinkle with almonds.

5. Serve and enjoy.
