INGREDIENTS

1.00 teaspoon (2 g)
  lemon peel
0.50 tablespoon (14 g)
  honey
0.25 cup (65 g)
  ricotta cheese, reduced fat
1.00 cup (158 g)
  blueberry, fresh
75 g
  yoghurt, vanilla, lowfat
 

METHOD

1.  Using a fork, break up  cheese in a medium bowl.  Drain off any liquid from the yoghurt;  add yoghurt to the bowl along with honey.  Using an electric mixer, beat at high speed until light and creamy.  Stir in lemon peel.

2.  Layer the lemon cream and blueberries in  dessert dishes or wineglasses.  If not serving immediately, cover and refrigerate for up to 8 hours.
