METHOD
- Peel the uncooked beets and halve them. Cut each half into 1/8-inch slices.
- In a serving bowl, combine the yogurt, salt, sugar, lemon juice and mayonnaise.
- Add the beets and apples, and toss util they are nicely coated with the yogurt mixture.
- Top with onion and serve.
