INGREDIENTS

2.50 beetroot (205 g)
  Beet, small
90 g
  Yoghurt, reduced fat
0 g
  Salt, iodized
1 g
  Sugar, white
1.00 teaspoon (5 g)
  Lemon Juice
1.00 tablespoon (16 g)
  Mayonnaise
1.00 apple (140 g)
  Apples, red, medium, diced
0.25 onion (22 g)
  Onion, small, chopped
 

METHOD

  1. Peel the uncooked beets and halve them.  Cut each half into 1/8-inch slices.
  2. In a serving bowl, combine the yogurt, salt, sugar, lemon juice and mayonnaise. 
  3. Add the beets and apples, and toss util they are nicely coated with the yogurt mixture.
  4. Top with onion and serve.
