Quick and easy vegetarian recipe, asparagus and tofu are the main ingredients of this ensemble. It is packed with flavors, you get a bite of tang from the lime, a kick from fresh ginger and chili, and oyster sauce to balance it all out. This version is nutrient dense, both asparagus and tofu can detoxify our system because of its high potassium, fibre and antioxidant content, but low in fat and calories, just 130 kcalories per serve!
1. Heat oil in a large skillet, cook tofu until golden about 3 minutes on each side. Set aside.
2. Using the same skillet, saute onion, garlic and ginger until onion becomes translucent.
3. Add asparagus, tofu, lime juice, chili, pepper and oyster sauce. Stir fry until asparagus are tender.
4. Serve in a platter or top over rice.
