SUMMARY
A simple way to serve a healthy a dinner to your family. Just toss evertyhing in a bowl and refrigerate for about an hour before serving. This fabulous recipe provides our body with high amounts of fibre and protein, but low in fat, GI and calorie. A great tasting meal for weight watchers!
INGREDIENTS
200 g
Wholemeal Pasta, boiled
100 g
Artichoke Hearts, drained and halved
0.50 tomato (84 g)
Tomato, chopped
5 g
Fresh Basil Leaves, torn
2.00 Juice of 1 lemon (94 g)
Lemon Juice
1.00 tablespoon (14 g)
Olive Oil
0.25 teaspoon (0 g)
Mixed Dried Herbs
1 g
Sea Salt
1 g
Black Pepper, ground
0.50 cup (115 g)
Cottage Cheese, Non-Fat
METHOD
1. In large bowl, combine oil, lemon juice and dried herbs.
2. Add artichokes and tomatoes. Season with salt and pepper to taste.
3. Add pasta, basil leaves and cheese toss to coat.
4. Refrigerate for about 1 hour.
5. Serve and enjoy.
