1. Combine apples, Splenda and cinnamon in a small bowl.
2. Top 2 bread slices with apple-cinnamon mixture and cottage cheese. Cover with remaining bread slices.
3. Melt butter in a non-stick skillet over medium heat. Add sandwich and toast 2-3 minutes on each side or until golden brown. Transfer into a serving plate.
